The trick to getting just the white part of the coconut cream is putting in the refrigerator. You can do this just a an hour or keep one in the fridge so it's at the ready whenever you need it. Open the can, and scoop out just the hardened part. Next, you'll heat that up ( in the microwave is fine) until its hot. You don't want it boiling though. add the chocolate of your choice but RESIST the urge to stir! Walk away for 2 to 4 minutes, THEN come back and whisk it with a fork. That's it! the longest part is waiting to mix it. You can use it as is, or pop it back in the fridge to harden up a bit.
